How to Cook the Perfect Steak

About 20 minutes before grilling, remove steaks from the refrigerator and let sit, covered, at room temperature. Heat your grill to high. Brush the steaks on both sides with oil and season liberally with salt and pepper. Place the steaks on the grill and cook until golden brown and slightly charred, 2 ½ to 3 minutes. Turn the steaks over and continue to grill another 2 ½ to 3 minutes for medium-rare (an internal temperature of 57°C/135°F), or slightly longer for medium (60°C/140°F). Times vary depending on steak thickness so use an instant-read meat thermometer for best results, and don’t cook past medium.​

Don’t test for doneness with anything but your finger or a good quality instant-read thermometer; cutting into the steak releases its juices and we don’t want that!

Transfer the steaks to a cutting board or platter, tent loosely with foil and let rest 5 minutes before slicing. For less tender cuts from the hip, like Inside Round and Sirloin Tip, remember to slice against the grain.
